Is your day off to a nice start?
I saw Les Mis last night for the second time. What can I say? I’m a sucker for musicals, beautiful songs about love and loss, and Eddie Redmayne. Swoon.
I was up early this morning to make a wonderful breakfast. This baked oatmeal is delicious. I subbed out the walnuts, applesauce, and raisins and used a mashed banana instead. Plus, I now have breakfast and healthy snacks for a few days. Not a bad start to the New Year.
I’ve also been off from work for the past week and have had several wonderful adventures. There’s a golf course across the street from my new apartment, and I finally had the chance to explore. It’s this amazingly beautiful place with a 10-mile path through hills, woods, streams, and of course golf areas. I saw at least 50 deer too. It was crazy. And I began to wonder, what happens if you get close to a deer and she doesn’t run away from you? Is it safe? I didn’t want to find out, so I walked the other way.
I also saw this sweet dog outside the grocery store the other day. I definitely did a double-take. Hahaha.
What have you been up to? I’m definitely going to get myself back on a regular blogging schedule this year. Thank you so much for bearing with me as I’ve transitioned into my new surroundings over the past few months. You are the best.

Baked porridge is lovely, I made it when I had early work starts. I like to call it boatmeal, heh.
