Chicken and Basil Pizza
Hello! I’ve seemed to have disappeared last week. A former professor asked me to edit a 250 page manuscript for him, so all of my free time was devoted to that. I loved reading his beautiful stories, but I didn’t have much time for anything more than editing and teaching my zumba classes.
Last night was my first night free from editing duties, and I took full advantage of it by making a phenomenal dinner.
This pizza was inspired by a recipe I found on Cooking Light last week.
Of course I tweaked it just a bit, because that’s what I do.
I added a bit of jarred tomato sauce to the white sauce and used some fresh basil instead of the oregano, chives, and parsley since that’s what I had on hand. Also, I had cooked my own chicken on Sunday. It’s my latest quick tip—I cook a few chicken breasts on Sunday evening and have it on hand for easy meals throughout the week.
The end result was so amazing, especially after a tough zumba and elliptical workout.

This looks awesome. I am inspired to create my own pizza for dinner tonight! We are good. Clara is sleeping longer stretches at night so I am feeling like a refreshed momma!!
