Summertime Eats
With all of the heat and humidity this summer, I’ve noticed myself craving light and refreshing foods daily. I rarely want something hot to eat, and I hate using the oven because it warms up the already humid kitchen. So, I’ve been sticking to salads, smoothies, and foods that I can make using my forever-treasured and handy panini maker.
Want a peek at my typical daily eats?
1. Fresh fruit is a summertime staple. Watermelons are a favorite and so inexpensive at the local farmers’ market.
2. I had a huge craving for guacamole after watching an episode of Jaime Deen’s new show on the Food Network. Does anyone else watch the Food Network at the gym? Ha. My recipe is super easy- 2 avocados, a tomato, cumin, a bit of onion, salt and pepper, and a squeeze of lime. (And you must serve with Red Hot and Blue chips.) YUM.
3. I found a really easy boxed falafel mix at the store the other day. You just use some water and mix it up. I cooked the falafel on the panini maker and served with a big, delicious salad. Perfect meal.
4. And you know how I was telling you how much I love watermelon? I discovered that a cup and a half of watermelon blended with a vanilla chobani tastes wonderfully light and refreshing- not to mention nutritious.
