Weekend Eats

What a lovely little weekend! I was very productive, enjoyed the nice weather and, most importantly, made some excellent food.

Doesn’t this look divine?

Crepes with vanilla yogurt, strawberries, and blackberries.

And I made my favorite lasagna recipe ever yesterday, just because the sun was shining and the breeze blowing.

This lasagna is nice and light but still delicious. (I like to play with the filling contents too. This time I skipped the cream cheese and skimped on the cottage cheese. Still awesome.)

Since I was on a roll in the kitchen, I decided to break out the Kodiak Cake oatmeal cookie mix that’s been hanging out in the pantry for the past three months. Somehow it has escaped Daisy’s wrath. (Just this Friday, she managed to attack a box of whole wheat angel hair, baking soda, and brown paper bags while I was at work. That’s my angel.)

These cookies are delicious.

They’re also loaded with whole grains, dark chocolate chips, and other natural ingredients. Plus they’re peanut free. Hooray.

So as you can see, I spent much of the weekend full and content. How about you?
