Baking Spree

Last night, Dennis and I attended my office’s holiday party. It was held at my co-worker’s mansion. Seriously, I’ve never been in a bigger house that people still live in. (Museums and castles do not count.) Her reconverted barn house was decorated head-to-toe in holiday decor, like garlands, nutcrackers, and sparkling lights, and Pottery Barn items that I’ve been lusting over for years. It was pretty incredible. I was going to take pictures, but I thought that might be a little creepy.

I decided to make baked goods for the big event. I tend to be a bit over ambitious and spent the past 2 days baking up a storm. I could not help myself. There are just so many recipes I want to make and only so many people to eat them. So last night was my chance.

I consulted my favorite baking blogs and came up with a game plan: Chocolate Cookie Dough Truffles and Peppermint Cookies from How Sweet It Is, Magnolia Bakery’s Red Velvet Cupcakes with my favorite Cream Cheese Icing, and Sugared Cranberries.

Everything was a HUGE hit. People raved about the truffles. They’re very rich, so next time I’d make them bite-sized. The peppermint cookies tasted like Thin Mints because I used Andes Peppermint Chips. The icing on the cupcakes was magnificent. So rich and fluffy. And those cranberries? They were probably the biggest hit. They are so easy to make yet addicting. In the future, I think I’ll add some orange zest. I also plan to whip up a batch of these as Christmas gifts served in my mini ball jars and tied with a festive ribbon.
