Just like mom made.
I’m afraid I’m getting sick.
I have quite the sore throat that is giving my voice a lovely, raspy quality reminiscent of E.T.
Even though I don’t feel amazing, I did prepare a delicious dinner that soothed my throat and warmed my body.
Have you ever had white chicken chilli?
It’s fantastic and reminds me of my mom. She used to make it all the time for the family. We would eat bowl after bowl of it because it was THAT good.
I always thought it was such a complicated meal, but I was wrong. It’s so easy. I had bowls of soup and tortilla chips ready in less than 30 minutes.
Here’s what you need. Plus some chicken and spices.
I started off by boiling a package of organic chicken tenders while I showered after teaching zumba. By the time I was clean, the chicken was moist and cooked through all the way.
After I cooked my chicken, I put the chicken broth, cannellini beans, and green chiles in a large pot. I let it warm up for a few minutes, and then I added half the packet of taco seasoning, cumin, a dash of Jane’s Krazy salt, red pepper, and hot sauce. (This chili tastes best with a little heat.)
I let the mixture simmer away until it was piping hot.
Then I dished out some for Dennis and I and topped the bowls with a bit of reduced fat Mexican cheese and served some tortilla chips along side.
See? So easy.
And so good.

My mom makes a similar soup, and we always put our chips in the actual soup and then put the cheese on top so it doesn’t sink to the bottom. Clever, huh?
I think I’ll be making this sometime soon!
