Bittersweet
Good morning love bugs!
I’ve missed you so. I hope you had an excellent Easter or simply an excellent weekend.
Mine was bittersweet.
Let’s talk sweet.
On Saturday morning I tested out that fabulous recipe I was telling you about on Friday afternoon. I did an extensive search on chocolate peanut butter egg recipes, and then I came up with my own version of a chocolate sunbutter egg. Would you like the recipe?
Sweet Lip’s Sunbutter Eggs
1/8 lb butter
4 ounces of light cream cheese
1 lb. confectioners sugar
1 cup sunbutter
dash of vanilla extract
pinch of salt
bag of milk chocolate chips
Combine the first 6 ingredients (until the chocolate chips) into a large bowl. Mix with a hand blender until creamy. Roll into balls, place on wax paper, and freeze for 5 minutes.
Meanwhile, melt chocolate chips in a measuring cup in the microwave. Be careful not to burn the chocolate. (I used short intervals of 20 seconds, stirring each time.)
Take the rolled eggs out of the freezer and dip into the chocolate. Place eggs back on wax paper and, when you’re done, place in refrigerator to harden.
Makes 24 eggs approximately.
These were out of this world delicious. I haven’t had a peanut butter egg for about 3 years (since I developed a peanut allergy), and these more than made up for what I’ve been missing. They turned out incredibly rich and sweet. A bite or two is all I really needed to feel satisfied and quite happy. Mmmm. So good.
In addition to making delicious sunbutter eggs, I also worked on an Easter basket(s) for Dennis. He made out like a king, don’t you think?
And what would Easter be without egg dying? Last night I used a Martha Stewart technique and marbleized 6 hard boiled eggs. It was so much fun to play with the colors and create fun combinations. Some of them look gorgeous.
(I like the teal/orange egg and the green/pink eggs the best.)
To top off all the fun holiday things, I took 2 marvelous, long walks with Daisy yesterday. We hung out under a cherry tree for a bit and soaked up the sweet scent from the blossoms.
Then Daisy got restless and started to yell.
She was definitely ready to go home.
So all of these moments brought me a great deal of happiness and serenity because, to tell you the truth, Saturday was more than just bitter. It was an awful, awful day.
I found out my poor kitty died in my sister’s arms back home. As I mentioned last week, he wasn’t doing so well. I cried for a good hour Saturday morning and couldn’t get my mind off my sadness. Dennis tried to comfort me, but he didn’t do a very good job. I continued to mope the majority of the day, but sometimes you just need to grieve. For anyone who says, “it’s just a cat,” I strongly disagree. Sweet, sweet Teddy was a friend and constant companion. We spent nights snuggled up on the couch together. We spent days watching tv together. I fed him chicken from the fridge, and he purred uncontrollably. He gave me hugs and kisses. And we loved each other very, very much.
It’s all so bittersweet.

im so sorry to hear about your kitty : ( the poor baby.. it is so hard to lose a pet, i know when my kitty passed it was so hard.. : (
on a slightly happier note, those sunbutter eggs look amazing.. seriously…
and im glad dennis the big-little-kid was happy with his easter basket haha
