It’s Bananas
Good morning beauties!
Is it Tuesday or Wednesday today? Oh, thank goodness. It’s Wednesday, isn’t it? I was going to be pretty sad if you told me it was Tuesday, and I was a day ahead of myself.
I substituted for a zumba class this morning, so I’m already feeling pretty pumped and sleepy all at the same time. The class was really fun, but I had to get up extra early- hence the paradoxical feeling.
When I got home, I decided to try Iowa Girl Eat’s Baked Banana Bread Oatmeal. It was simple to make, but I was a bit worried that it would take too long in the oven. So, I switched up my schedule a bit and showered while the oatmeal baked away.
It turned out yummy. It would have been better had I time to make the brulee topping, but you know, sometimes you must make sacrifices (especially if it means getting to work 10 minutes late rather than 25).
I’ve had my fair share of bananas in the past 24 hours actually. I had one last night with 4 teeny, tiny clementines. These things are seriously small, but oh, so cute.
And I also had a grilled avocado, provolone, and tuscan pane panini with snap peas.
It was a delicious and satisfying dinner.
But I didn’t get to eat until 8:30 pm! By then, of course, I was crazy hungry after teaching a zumba class then driving 20 minutes away to sign a contract for one of my other teaching gigs. In spite of the late dinner time, I was super excited to be an official zumba teacher outside of the college where I work. It’s the little things, you know?
