Tempeh Attempt
Remember when I was really excited to try tempeh? Yeah, I haven’t tried it yet, or should I say hadn’t.
I decided to base my lunch off of the tempeh that’s been sitting in my fridge for too long finally today. I wanted to try something simple, so I threw it on my panini maker until it got nice and crispy. I went the sandwich route and added some sabra, tomatoes, and spinach. (You can’t go wrong there.) Then I put it altogether like this:
And check out the beauty cut in half.
I have to be honest. It looks better than it tasted. It wasn’t bad, but it wasn’t good. I loved the crispiness from the panini maker cooking method, and I loved all of the other sandwich ingredients. It was just a little blech (for lack of a better word). I ended up eating about half of the tempeh and just eating the sandwich without it. Much better. Don’t worry, I made up my missing lunch with a spoonful of edy’s thin mint from the freezer. Fair compromise, right?
I also had a cup of red and green grapes.
So what do you think? Is there a better recipe to use for tempeh? Do you like it? I know Kath eats it plain with pumpkin butter but, after today, that doesn’t sound appetizing at all. Maybe I need to try a different brand?

hey girl!! i LOVE tempeh! did you cook it at all? it can have a bitter taste if its not cooked or marinated!! maybe give it another chance this way!?! xoxoxo j

Aw I’m sorry you didn’t like it! I love tempeh, but I definitely always cook it first (usually with a little soy sauce, EVOO, and brown sugar).
I dont have any suggestions either! sorry! but thanks so much for the honest review, I have also been wanting to try tempeh for the longest time – someone once said that teryaki sauce goes really well with it!
